Fajita Smashed Burger…Yo Quiero!

Short Rib Smashed Burger

As I have admitted to you before, I am a not so secretive hoarder of classic as well as unique cheeseburger experiences. What I may not have mentioned is that I am also very interested in the marriage of delicious and sometimes unexpected flavor combinations. I get this from my father…King of the Banana and Mayonnaise Sandwich.

While I don’t tend to get quite THAT carried away with my flavor profiles, I do love to bring two different cuisines together to create something bigger than the sum of the parts. Yes, I am still talking about food and yes, it deserves quite the dramatic introduction. The Fajita Burger is another gift from Chef Victor Orsini. Its like going out for Mexican and ordering a juicy cheeseburger or heading to a burger bistro and getting fajitas. In short, it’s delicious and the best of both worlds!

Fajita Burger

Season Smashed Burgers with Fajita Spice. Grill for approximately 4-5 minutes per side from frozen or 3-4 minutes per side from thawed, or until internal temperature reaches 160°F.

Melt Cheese over Burger and place on Grilled Bun. Top with Peppers, Onions, Guacamole and Sour Cream to take the classic American Burger south of the border.

Black Angus Ribeye Steak with Thyme and Butter

What you will need:

  • Black Angus Ribeye Steaks
  • Salt & Pepper to taste
  • Butter
  • Thyme
  • Garlic

  • Allow your steak to reach room temperature before broiling or pan-searing. This is the best way to get a truly tender steak.
  • Use a heavy bottom pan to allow the heat to distribute evenly.
  • Pan sear on high heat to break down connective tissue properly and avoid a chewy steak.

2 Tbsp. Olive Oil
1 Medium Sliced Onion
2 Cups Sliced Bell Peppers (Green, Red, Orange and Yellow)
Sea Salt & Coarse Ground Pepper, to taste
8 Mild Italian Sausages (4oz. links)*
1/3 Cup Water
Fresh Basil
2 Cloves Garlic

*Spice it up with Hot Italian Sausage!

The Fight to Dine In

Shopping smart and preparing meals at home is a healthier lifestyle for anyone. Not only can you track where your food is coming from, but you can also decide what goes into it. Using proteins, produce and whole grains without additives, pesticides or preservatives is a great jumping off point.

However, that lifestyle is often easier said than done. As a realist I have come to terms with the fact that I never feel a greater desire to dine outthan when I have just brought home a boatload of groceries! I have filled my refrigerator with fresh and delicious items, I have unpacked a 5-Star quality box of premium meats or seafood and inevitably my mind starts to wander towards my favorite restaurants and take-out spots.

I have noticed this phenomenon many times and it is not the food that is the problem. It’s Me! We all know how to cook to some degree, we can all follow a cookbook if not, so what is the issue with making a commitment to Dine In? My Fight to Dine In stems from coming home after a long day of work and not wanting to do another thing!

Lately, I have resorted to an old tactic, a foolproof that has been used for years in middle school cafeterias and high school locker rooms to make dating decisions – the pros and cons list.

Pros to Dining Out

  • No Cooking
  • No Dishes

Cons to Dining Out

  • You don’t know where your food comes from
  • Preparation methods can add hundreds of calories
  • Prices have gone up across the board…even McDonald’s Happy Meals make my wallet sad
  • No Shirt No Shoes No Service

Pros to Dining In

  • Family meals are proven to decrease likelihood of delinquent child behavior
  • Saves $$$
  • It always tastes more delicious when you make it with love
  • You know where your food comes from
  • You know what you are putting into the food and can monitor health and nutrition
  • No Shirt No Shoes No PROBLEM!

Cons to Dining In

  • It requires a bit more effort (but hey, so does driving to a restaurant…getting a table…gambling with service quality…I could go on)
  • Dirty Dishes (on the other hand, you have to work off that meal at some point!)

When I actually stop to weigh the value of Dining In vs. Dining Out, I always end up with the same decision. So get your friends or family together and join me in making Dining In the New Dining Out!

Football Foods & Game Day Eats

Sports and Food! Two of my favorite things! This is prime season for tailgating, BBQing and getting together in the Man Room to watch the big game. Nothing says football like a hearty meal or grown men in tights, running as fast as they can to tackle other grown men in tights! However you celebrate Game Day…friends, food and fun should be involved.

This is a video from a recent Philadelphia Eagles game. Chef Victor Orsini from Rastelli Direct took over the tailgate and made it a 5-Star experience. It is easier than you think to make Sports Fare into Fine Dining. Start with a hungry crowd, add one part Delicious Ingredients, 20 parts Crazy Sports Fans, mix together and grill! Below is Chef Orsini’s Menu…what’s yours?
